Rocky road is a favourite classic candy, great for the festive season and this white chocolate rocky road is perfect if you love white chocolate (or know someone who does).

Bonus, it’s so, so ridiculously easy to make. With just 5 ingredients and 10 minutes effort, your white rocky road will be in the fridge and setting ready to serve up. It’s also so much fun and simple enough for kids to make so get the kids in to help.

This no bake slice is seriously delicious and filled with texture from the meltaway white chocolate, to chewy marshmallows and candy, plus crunchy nuts and cookies. This recipe is adapted from my classic recipe for rocky road and it’s perfect for wrapping up and gifting at any time of year but especially at Christmas or Easter.

Ingredients

The ingredients in this easy white chocolate rocky road are pretty basic but I’ll expand on them below in case you want to know what I use.

  • White chocolate: Just get a good quality chocolate here – we’re using white for this. They all have different fluidity when melted so one that’s really runny when melted will coat everything easily in a thin coating but may pool a little at the bottom. One that is thicker when melted will require more mixing to get everything coated but is less likely to pool. Either is fine but just choose one you love.
  • Marshmallows: I use medium marshmallows because a big bite of marshmallow in chocolate is amazing but you can use mini marshmallows or use jumbo ones, chopped up. You need ¾ of a cup packed. You can even use homemade marshmallows like these chocolate marshmallows or orange marshmallows.
  • Candy: You want a chewy candy cut into small pieces. Raspberry works a treat and looks very festive at Christmas time but you can use any flavour you love. You can also swap them for turkish delight or dried fruit like dried cranberries, cherries or apricots. You can also use glace cherries but make sure to dry them off a little before mixing them in.
  • Biscuits/cookies: Any sweet un-filled cookie works fine here.
  • Pistachios: Again pistachios not only taste great but they also have a wonderful festive look. You can swap for any nuts you like though. Cashews, peanuts, almonds, pecans, hazelnuts or macadamia nuts – are just some other choices.

Coconut is another classic rocky road ingredient. While I love coconut, I don’t love it in rocky road but you can certainly add it. Desiccated coconut will work but I prefer shredded, if I do add it (it’s larger pieces than dessicated).

How to make it

While traditionally, milk chocolate is used, you can make rocky road with white chocolate. This white chocolate rocky road recipe is super-easy to make and takes no time at all.

1. Melt the chocolate

Start by melting the chocolate and this is the only part of the recipe you really need to be paying attention. You don’t want to overheat the chocolate or it will soften or melt too easily as soon as it’s out of the fridge. To prevent that,

  • use a microwave-safe bowl – glass is perfect here,
  • heat it in 30 second increments only,
  • heat on 80% power, not full power,
  • stir well after every burst in the microwave, and
  • only until just melted.

2. Add the add-ins

Now, add all your add-ins to the melted chocolate and stir really well until everything is coated.

3. Shape and set

Pour or rather scrape the mixture into your prepared pan and chill for 2 hours or until solid before serving.

As soon as the rocky road is solid, it’s ready to serve. Use a sharp knife and cut it into slices or squares. If you wrap it up in a cellophane bag or a pretty gift box with a festive ribbon, it’s perfect for gifting.

Scaling the recipe

This white chocolate rocky road recipe doesn’t make a huge amount so you won’t have too many leftovers to get through. It’s perfect for a couple over a couple of days for instance. However, it’s so easy to scale it up for gifting.

Doubling the recipe will give you the right amount for an 8×8 inch square baking tin. Four times the recipe will suit a 9×13 pan really well.

Storage

Store your white rocky road in the fridge. It keeps for weeks in the refrigerator but this is dependant on the add-ins you use. None of the ingredients I’ve used here are going to go-off in a hurry.

You can also freeze rocky road for up to 3 months in an airtight container.

This white chocolate rocky road is the perfect treat for the white chocolate lovers in your life. So quick and easy and only 5 Ingredients!

Ingredients

  • 300 g good quality white chocolate roughly chopped
  • ¾ cup medium-sized marshmallows (about 15 – I used Pascal)
  • cup raspberry chewy candies cut into quarters (like Allens Ripe Raspberries or Frogs Alive),
  • cup shelled unsalted pistachios
  • cup roughly chopped cookie pieces (3-4 sweet cookies/biscuits)

For best results, always weigh ingredients where a weight is provided

  • Lightly rub a little oil around the inside of a 4x8inch loaf pan then line with baking paper.
  • In a large microwave safe bowl, melt the chocolate in 30 second increments on 80% power, stirring really well after each until just melted. Don’t overheat.
  • Add the marshmallows whole, chopped candies, pistachios and chopped cookies. Mix well to combine (see notes 2).
  • Tip the mixture into the prepared pan and spread it out to the edges.
  • Chill for 2 hours or until solid, then slice and serve.

Notes

  1. Tablespoons: I use a standard Australian 20ml tablespoon (equal to 4 teaspoons). Check yours before measuring.
  2. Chocolate: Keep in mind all chocolate melt to different levels of fluidity. If you get a chocolate that melts really fluid, it will coat the mixture more easily but also may pool more in the pan. On the flipside, a chocolate that is still quite thick when melted will take a little more work to get everything coated but is less prone to pooling. Either is fine, just will give a slightly different result.
  3. You can swap some or all of the candies for cranberries or even chopped dried apricots. You could also swap it for Turkish delight. You could even add some freeze-dried raspberries, however, something chewy is great in a good rocky road.
  4. White chocolate rocky road is great for gifting. It is best kept in the fridge but can sit out at room temperature fine for a little while as long as you don’t overheat the chocolate when melting.
  5. You can swap the pistachios for any other nut you like.
  6. You can add some shredded coconut or additional add-ins to the mixture too but for every tablespoon you add, remove 1 tablespoon of either the candy, nuts or cookies.
