8x4 inch loaf pan or scale to suit
Instructions
Lightly rub a little oil around the inside of a 4x8inch loaf pan then line with baking paper.
In a large microwave safe bowl, melt the chocolate in 30 second increments on 80% power, stirring really well after each until just melted. Don’t overheat.
Add the marshmallows whole, chopped candies, pistachios and chopped cookies. Mix well to combine (see notes 2).
Tip the mixture into the prepared pan and spread it out to the edges.
Chill for 2 hours or until solid, then slice and serve.

Notes
Tablespoons: I use a standard Australian 20ml tablespoon (equal to 4 teaspoons). Check yours before measuring.
Chocolate: Keep in mind all chocolate melt to different levels of fluidity. If you get a chocolate that melts really fluid, it will coat the mixture more easily but also may pool more in the pan. On the flipside, a chocolate that is still quite thick when melted will take a little more work to get everything coated but is less prone to pooling. Either is fine, just will give a slightly different result.
You can swap some or all of the candies for cranberries or even chopped dried apricots. You could also swap it for Turkish delight. You could even add some freeze-dried raspberries, however, something chewy is great in a good rocky road.
White chocolate rocky road is great for gifting. It is best kept in the fridge but can sit out at room temperature fine for a little while as long as you don’t overheat the chocolate when melting.
You can swap the pistachios for any other nut you like.
You can add some shredded coconut or additional add-ins to the mixture too but for every tablespoon you add, remove 1 tablespoon of either the candy, nuts or cookies.
