These bite-sized, pan fried crispy salmon bites make a super quick dinner that’s full of flavour. Each thick chunk of salmon is seasoned all over with simple spices, then pan fried until golden with a lovely crust. And you can have them ready in under 15 minutes!
Salmon is flavourful and healthy and always so quick to cook. Serve your fried salmon bites as a quick weeknight dinner or as an appetizer (just put a toothpick through them and they’re great finger food). Plus, salmon bites are quicker and easier to cook than salmon fillets.

Ingredients & substitutions

- Salmon: Salmon filets will work but larger portions are easier to cut to chunks of the right size. Use what you can easily get hold of.
- Spices: The spice coating has just a handful of ingredients – onion powder, garlic powder, paprika, salt, dried oregano and black pepper. It’s a versatile mix though so if you want to you can add some cayenne pepper for heat or dried chilli flakes (red pepper flakes). A little cumin would be great too.
- Cornflour, aka cornstarch in the US, gives these crispy salmon bites their crispy crust without the need for panko crumbs or breadcrumbs.
- The dressing: The dressing is tangy and fresh and made up of Greek yogurt, sriracha (or another hot sauce of choice) and lime juice (you could swap this for lemon juice). It’s so quick and easy.

How to make crispy salmon bites
These succulent little chunks of fried salmon are seriously good and also seriously quick and easy to make. We’re talking ready in 15 minutes!

1. Make the spicy mayo
Not quite a mayo, since we’re using Greek yogurt but it gives the same effect, just a bit lighter. Combine the dressing ingredients in a bowl and set aside.

3. Season the salmon
While you have some oil in a large frying pan or cast iron skillet heating over medium heat, toss the salmon in the seasoning.

4. Cook the salmon
Give the salmon another toss in the seasoning to make sure it’s well coated, then add the pieces to the pan. Don’t overcrowd the pan – you may need to do this in batches if your pan is on the smaller side.
Cook the salmon for about 3 minutes each side until golden and just cooked through. Ready to serve!


Tips and tricks
- The biggest tip to getting perfeclty crispy salmon bites is that cornflour. It crisps up better than plain flour (all purpose flour) and gives the salmon a gorgeous crunchy crust.
- Watch the salmon carefully and turn it once it’s golden brown underneath. Don’t let those spices burn or it will just taste bitter or acrid.
- Keep the heat on medium. These salmon bites will cook quickly so you want to cook them gently.
- I find a stainless steel or cast iron pan best here – it gives the best crust. A non-stick pan will work in a bind but won’t give quite as good a crust.
Serving ideas
This easy salmon recipe is not only easy to make but it’s also a versatile dish.
- Rice bowl: You can serve these salmon bites like I do with rice and a simple avocado salad (avocado, cucumber, red onion, coriander (cilantro) and lime juice). It’s so good.
- Potatoes work great here too – this warm potato and asparagus salad is perfect with fried salmon bites.
- Hot honey: It’s also great served with a drizzle of hot honey (this would turn these into a great appetizer as well).
- Tacos: And they’re wonderful turned into salmon tacos.
- Garnishes: I don’t believe in garnishing for garnish sakes – make sure to choose something with flavor that compliments the salmon. I add fresh coriander (cilantro leaves) but finely sliced spring onions (scallions / green onions) are great too.
Storage
Store any leftover salmon bites in an airtight container in the refrigerator for 3-4 days. You can reheat leftovers it in a pan, in the oven or in an airfryer.

Ingredients
- 500 g salmon fillets cut into 1 inch cubes (~1lb)
- 1 ½ tablespoons cornflour (US cornstarch) (6tsp, notes 1) (18g)
- 1 teaspoon onion powder
- 1 teaspoon paprika (sweet, mild or smoked)
- ½ teaspoon dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon freshly cracked black pepper
- 2 tablespoon vegetable oil , for frying
YOGURT DRESSING
- ½ cup Greek yogurt (125ml)
- 1 ½ tsp Sriracha
- 2 tsp lime juice
For best results, always weigh ingredients where a weight is provided
Equipment
- large frying pan / skillet
Instructions
- Combine the yogurt dressing ingredients and set aside.
- Combine the cornflour and all the spices in a medium bowl.
- Preheat 2 tablespoons of oil in a large skillet / frying pan over medium heat.
- Toss the salmon cubes in the spice mix making sure to get as much of the mix stuck to the salmon as possible.
- Add the salmon cubes in an even layer, but not too close together, in the pan (don’t crowd the pan; depending on it’s size you may need to cook them in batches – I fit one batch into a 12 inch pan).
- Cook for 3 minutes or until pale golden underneath, then flip and cook on the other side for 2-3 minutes or until they easily flake apart.
- Serve with rice, drizzled with the sauce.
