- Ritz crackers: Wanting to combine cracker toffee with florentines, I chose Ritz crackers for this almond florentine slice. They’re crisp and only mildly salty. You can use other crackers too like Saltines, Salada or even pretzels.
- Almonds: The crunch of slivered almonds is perfect here but if you have sliced almonds, they’ll work or you can roughly chop whole almonds.
- Cornflakes: A classic in both the flavour and texture of Florentines.
- Glacé cherries and dried cranberries: glacé cherries are traditional in florentines, however you could swap all the dried fruit for a mixture of your own.
- Butter: Unsalted is best. If you use salted butter, leave out the additional salt called for in the recipe.
- Sugar: Brown sugar adds great toffee flavour here. You can use dark brown sugar here too.
- Honey: Is just there for a little honey flavour. You can leave it out if you don’t have any. You can also replace it with maple syrup, golden syrup or even treacle.
- Orange zest is optional but is often used in florentines. If you like dried peel you can use that in it’s place or you can just leave it out if you prefer.
- Chocolate: I find dark chocolate is great as a balance to the sweetness but you can use milk chocoalte if you like.
How to make easy florentine slice
This almond florentine slice is super quick and easy so you can make it almost last minute.

1. The cracker base
Break up the ritz into 3-4 pieces each and scatter them over a lined baking tray.

2. Add the other mix-ins
Scatter over the remaining filling ingredients.

3. Step 3
Melt the butter and sugar together over medium heat, then bring the mixture to a simmer for 2 minutes.


4. Bake
Drizzle the toffee mixture evenly over the ingredients in the baking tray. It won’t cover it completely and that’s fine, just make sure it’s evenly distributed. Now, bake for 12-14 minutes.

5. Chocolate
Drizzle melted chocolate over the top and chill it until it’s completely cooled and set.

Storage
Fridge
Store the florentine slice in the fridge in an airtight container for 4-5 days. It will be fine at room temperature too but the chocolate may soften.
Freezer
This slice freezes beautifully too. Once fully set, break up into pieces and freeze in an airtight container for up to 2 months. Thaw at room temperature for 20-30 minutes.

- Nut swaps: Swap almonds for chopped pecans, pistachios, cashews or hazelnuts.
- Fall-ready: Add in a little fall spice like pumpkin spice, cinnamon or nutmeg.
- Extra crunchy: Swap the Ritz crackers for pretzels.

Ingredients
- 20 Ritz Crackers (notes for more options)
- 1 cup slivered almonds (110g/~4oz)
- 1 cup Corn Flakes (33g/1 ¼oz)
- ½ cup glace cherries halved (100g / 3 ½oz)
- ⅓ cup dried cranberries low sugar (50g / ~ 1 ¾oz)
- 140 g unsalted butter (5oz)
- 150 g brown sugar (¾ cup)
- 1 tablespoon honey or golden syrup (notes 1)
- 1 teaspoon orange zest optional
- ¼ teaspoon salt
- 125 g dark chocolate (~4 ½oz)
For best results, always weigh ingredients where a weight is provided
Equipment
- 23x30cm / 9×12 inch baking pan
- Heavy based medium saucepan
Instructions
- Preheat the oven to 180C/350F. Grease then line a 23x30cm (9×12 inch) pan with baking paper.
- Break up the Ritz crackers into quarters and scatter them over the base of the pan in a single layer.20 Ritz Crackers
- Evenly scatter over the almonds, cornflakes, cherries and cranberries. Set aside.1 cup slivered almonds, 1 cup Corn Flakes, ½ cup glace cherries, ⅓ cup dried cranberries
- In a medium pan over medium heat, combine the butter, sugar and honey gently stirring until fully amalgamated.140 g unsalted butter, 150 g brown sugar, 1 tablespoon honey
- Let the mixture come to a simmer and let it continue bubbling for 2 minutes.
- Stir in the orange zest and salt.1 teaspoon orange zest, ¼ teaspoon salt
- Carefully drizzle the toffee mixture over the ingredients in the pan (it won’t cover it completely but it will become more fluid in the oven and fill in the gaps on it’s own so just make sure it’s evenly spread over the pan).
- Bake for 14 minutes. Be very careful when taking it out of the oven – it will be likely bubbling molten lava.
- Melt the chocolate in a microwave safe bowl in the microwave in 30 second intervals, stirring well between each one until the chocolate is just melted.125 g dark chocolate
- Drizzle the chocolate over the florentine slice.
- Set the pan aside and let it cool for 30 minutes before lifting by the paper onto a cooling rack until it’s cool and hardened.

Notes
- Tablespoons: I use a standard Australian 20ml tablespoon (equal to 4 teaspoons). Check yours before measuring.
- Ritz crackers are light, crispy and just lightly salted. You can use other types of crackers like Salada crackers, Saltine crackers, soda crackers or even pretzels. You want to fill about 50% of the pans base in a single layer with the crackers (you should have as much bare area as you do area covered with crackers on the base).

This is just delicious and kids and grandkids love it! I used pretzels instead of Ritz and omitted the orange zest due to not having any oranges at hand and it was a hit. ( I have made the florentine biscuits using the zest and they’re amazing!!) Whipping up a batch as I write this review to take to my daughters tomorrow.

Can I ask do you know the rough weight of the crackers? I have some mini ritz crackers that I think would be perfect to use up in this 🙂
Great question, Robin. I just weighed them out and they are 65g. Keep in mind, this only works for Ritz since they’re quite a light cracker.
