Lay the wings out on a wire rack over a baking tray and let them sit, uncovered in the fridge, for 6 hours or more.

Combine the wings with the spices and mix well.

Lay the wings back out on the wire rack and bake.

Combine the sauce ingredients in a saucepan and cook until it thickens slightly.
