Authentic arrabbiata sauce is so easy to make and tastes spicy, punchy and full of tomato flavour. It's great on everything from pasta to pizza.

Ingredients

extra virgin olive oil

garlic

dried chilli flakes

tinned peeled whole tomatoes (san marzano if you can get them)
(28oz)

tomato paste

balsamic vinegar
For best results, always weigh ingredients where a weight is provided

Deep saucepan
Instructions
Heat the oil in a pan over medium heat.
Add the garlic and chilli flakes and cook for 1-2 minutes until fragrant.
Add the tomatoes, tomato paste and salt. Mash the tomatoes a little with a potato masher to break them up.
Simmer uncovered for 15-20 minutes until thickened.
Stir in the balsamic vinegar. Taste and season to taste with more salt and/or pepper.

Notes
Tablespoons: I use a standard Australian 20ml tablespoon (equal to 4 teaspoons). Check yours before measuring.
