This air fryer roast chicken is juicy and tender inside with perfect crispy skin. It has a delicious rotisserie chicken style seasoning and is so easy to make.

Instructions
Take the chicken out of the fridge 30 minutes before starting. If you cook it straight from the fridge, the cooking will be uneven and may take longer leaving you with dry parts.
Dry the chicken skin all over and inside with paper towel.
Mix the oil and spices in a small bowl or jug. Don’t try to cut back the oil or the seasoning won’t spread or brown so well.
Brush or rub the seasoning mix all over the chicken focusing mainly on the breast, wings, drumsticks and thighs (You can leave the back area bare).
Place in the air fryer basket, breast side down, and cook at 180C/350F for 30 minutes.
Carefully flip the chicken so the breast is facing up (the breast will be very pale at this point) and cook another 20-25 minutes at 180C/350F.
Test the temperature using a meat thermometer - it should reach 74C / 165F in the thickest part of the breast. If it's close but not done, just give it another 3 minutes cooking.
Transfer, breast side up, to a chopping board and rest for 10 minutes before carving. Don’t skip resting as it allows the juices to redistribute.

Notes
Tablespoons: I use a standard Australian 20ml tablespoon (equal to 4 teaspoons). Check yours before measuring.
Chippy salt is a mixture of salt and seasonings. If you can’t find it, simply use 1 teaspoon of fine sea salt, an extra 1/2 teaspoon of onion powder and garlic powder for a close enough substitute.
If you can’t get ground sage, dried will work or blend some dried sage in a spice blender or mortar and pestle.
