So I’ve got something a little different on the menu today – Prawn Sliders with Sriracha Mayo. These are fresh, summery and light and perfect for a party starter.
Remember how Paul Hogan talked about throwing a “shrimp on the barbie”? I never really understood why because, in Australia, we call them prawns but they’re exactly the same thing so, meh! And a “barbie” well that’s Aussie slang for a barbecue.

Plump, juicy prawns are lightly seasoned and fresh off the grill. Quick and simple but full of flavour they sit atop fresh green salad leaves, avocado, a spritz of lime and then a drizzle of sweet and spicy mayo.

They’re the perfect size to start a relaxed, afternoon meal and they’re easy to eat with one hand. All very important things when you have a cocktail in one hand.

They’re also such a simple snack to make. Everything can be made ahead of time with just the prawns being grilled or fried at the last minute (and they take literally minutes).

Ingredients

For the Sriracha Mayo

  • 2 tablespoons mayonnaise (notes)
  • 2 tablespoons sour cream (notes)
  • 2 teaspoons sriracha
  • juice of half a lime

For the sliders

  • 4 small dinner rolls
  • 2 teaspoons olive oil
  • 16 medium prawns, shelled and deveined
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/4 oakleaf lettuce, torn (any lettuce is fine)
  • 1/4 avocado, sliced
  • 1/3 cucumber, sliced into thin strips
  • Lime juice to finish

For best results, always weigh ingredients where a weight is provided

Instructions
 

For the Sriracha Mayo

  • Mix together the mayonnaise, sour cream, sriracha and lime juice until combined. Place in fridge until required.

For the sliders

  • Cut the dinner rolls in half. Set aside.
  • Mix the prawns, oil, salt and pepper in a bowl and set aside.
  • Heat a barbecue or just a frypan then add the prawns Cook, turning often until pink and just cooked through. About 5 minutes.

To assemble

  • Top one side of the rolls with lettuce, avocado and cucumber, then 4 prawns and a good spritz of lime.
  • Top with sriracha mayonnaise, then the top of roll.
  • Stick a skewer through the slider and serve

Notes

  1. I use a standard Australian 20ml tablespoon (4 teaspoons worldwide)
  2. I used both light mayonnaise and light sour cream but full fat / whole will also work perfectly.
