Cranberry & White Chocolate Blondies are a rich, dense slice filled with cranberries and white chocolate
I have a confession to make. I think I like Blondies more than Brownies. I know, I know but try these first. You might just agree. Blondies are more sweet than Brownies and they have a much more caramelly (is that even a word?) flavour.
I use dark brown sugar to make these incredibly sweet and and gooey. I can never stop at one.
These are super easy to make, just like brownies.

Sweet, unctuous and very addictive
- 1/2 cup unsalted butter 113g, melted
- 1/2 cup dark brown sugar packed
- 1/3 cup caster sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup plain flour 128g
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 cup cranberries
- 1/2 cup white chocolate chips
Preheat your oven to 175C (350F). Line an 8x8 inch baking tin with baking paper. (If you scrunch it up first, its much easier to push into the corners)
Start by lightly beating the egg. With the mixer still going on low speed, add the sugar, then the vanilla and finally the melted butter until it is fully incorporated.
In a separate bowl whisk together the sifted flour, baking powder and salt. Add in 3 parts to the wet ingredients, mixing between each addition until just combined.
Fold in the cranberries and chocolate chips. Pour the mixture into your prepared tin.
Bake in the oven for 25 minutes. Cool in the tin before cutting into 20 pieces.
